beetroot

Like any good Aussie, i love a bit o' beetroot. in summer... on a burger, or just on the side of the plate - its bright juices staining everything else pink! I have only ever had tinned beetroot before, but I heard that REAL beetroot is delicious. Unfortunately my parents weren't too adventurous with meals as i grew up so i missed out :(

anyway, so i set out and bought 2 big beetroot planning to roast them. Last night was the night for it, so i created a dish which i think was fucking unreal. i looked at a few ways of cooking the beetroot and some accompaniments and decideded on a gourmet theme. this is what i produced...



*First i quartered the beetroot and tossed it in an oil marinade, then put it in a roasting dish with some blobs of Nuttelex (or butter) on top of each quarter. Cover the dish in foil and bake for about 45 mins at 220c.

*While that's going i made a potato/sweet potato mash and set it aside. I also caramelised some onions in a frypan.

*When the beetroot is ready, the rest is a sinch! Put the mash on the plate for the beetroot to sit on, then arrange the quarters on it so it looks like a split baked potato. I wilted some spinach in a frypan with a drizzle of boiling water then put it ontop of the beetroot, followed by goats cheese, then the caramelised onions.

*I wanted some healthy greens so i put some steamed broccoli and halved brussel sprouts around it, then drizzled those with vegan gravy for a bit of a sauce.

*At the same time as all that i made a roast pumkin soup for dinner tonight MMMMM!!!!

Anyway, back to the beetroot - IT WAS AWESOME! Roast beetroot now is one of my favourite things ever! i will definately not cook a roast without it ever again! Also on another note, my urine has a pink hue to it today! Wonder why...
